What is a level 4 pureed diet? The International Dysphagia Diet Standardization Initiative (IDDSI), an internationally recognized standard for texture-modified diets, describes level 4 pureed food as having a smooth consistency with no lumps or liquid separation [ 1 ]. It is often compared to the consistency of mashed potatoes or hummus.

Remove and allow to cool. Place the cream and milk in a good sized pan, break up the now set baked cheese and stir into the mixture. Bring to a simmer over a moderate heat. Melt butter in a medium saucepan over medium heat. Add sliced apples and cook until slightly softened, ~5 minutes. Add brown sugar, lemon juice, cinnamon, nutmeg, and ginger. Mix granulated sugar and all purpose flour in a small bowl. This will help the flour from clumping in the pot.
